Gluten Free Waffles!
I wanted to try doing a Gluten Free waffle, but I must say, I like a soft fluffy type kind of girl, not hard and brick form, lol.
Today I think I came up with one that works for me. Check it out and let me know what you think:
First, I make my flour mixture ahead of time, so when I am ready to make the waffles, all I have to do is grab the flour and add my wet ingredients.
3 Cups Oat Flour (Milled or purchased)
1 Cup Coconut Flour (I like Trader Joe’s)
4 Tbsp Baking Powder
1 tsp Salt
Keep this dry mix stored in a freezer until ready.
1 1/2 Cup of Flour Mixture
1 tsp Coconut extract
2 Tbsp Maple Syrup or Honey
2 eggs (or 1 Cup Apple sauce or 2 tbsp flax seed milk)
3/4 Cup Coconut milk (or any milk you choose)
Pinch of cinnamon (Optional)
1 Tbsp of Coconut oil (or 5 Tbsp of Earth Balance butter).
Combine wet ingredients in a bowl, work together. Add dry ingredients to the wet, and mix. If mixture seems too stiff, just add more milk to thin it out, but not too much. Let sit for about 3-4 min and then place mixture in waffle iron, for about 5 min each. Depending on your iron, keep and eye, as time may vary.
When done, top with your favorite waffle toppings, or fresh fruit. My kids LOVE THEM!
