CARROT Got Your Tongue!
A dozen of Vegan Cupcakes made for a KING! I love this recipe and I chose to use my homemade applesauce instead of the suggested crushed pineapples and it turned GREAT!
I also wanted to kick in spring, so I added some cute spring flower cups to decorate the cakes.
1 cup granulated sugar
1/3 cup vegetable oil
2 TBLS lemon juice
1 teaspoon pure vanilla extract
1 Cup of Applesauce
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground allspice
1/2 teaspoon salt
3/4 cup plus 2 tablespoons all-purpose flour (spooned and leveled)
1 1/2 cups shredded carrots
1/2 cup chopped walnuts
1/4 cup shredded coconut, plus more for garnish (optional)
8 ounces bar cream cheese, room temperature
3/4 cup confectioners’ sugar
I ran out of confectioner sugar, so I made my own in my vitamix out of granulated sugar and it turned out fine…literally, lol.
Bake at 350 for 20 min.
