Well, a few of you have asked about the Crock Pot lasagna that I did recently. My good friend Cici shared it with me, so I will happily share it with you!
Very easy and leave over night if you would like.
Place pasta sauce of your choice in the bottom of the pot. Enough to cover well. Place a layer of lasagna noodles or even elbow, or bow tie will work, over the sauce. I used whole wheat elbow pasta noodles. Then your next layer could be your tofu ricotta cheese, then a layer of veggies ( I used fresh spinach, sliced red peppers and onions). Then I put a layer of cashew cheese (spiced), and then another layer of noodles, then sauce and repeat this for a few layers.
The last layer should be sauce and it should cover everything on top.
Turn cooker on low and place top on crockpot. Let it cook for 5-6 hours. About 30 min before you turn it off, place your cashew cheese on top and let it cook for the last 30 min.
you can prepare this and let it cook over night, or when you awake in the morning, it can cook while you are at work and come home for lunch or supper.
